Organic Whole Milk Kefir

Equipment

  • Nylon strainer
  • Mason Jars with lids
  • silicone spatula

Materials

  • 4 cups Fresh Organic whole milk low fat or skim is also acceptable
  • 1 teaspoon Active Kefir Grains

Instructions

  • Place the grains into a Mason Jar, add the milk and cover with jar lid.  Leave on a kitchen counter undisturbed for 12-24 hours or until thickened. Once you have thickened Kefir, strain into a clean mason jar using a nylon strainer.
  • You can either refrigerate the strained Kefir for a semi-sweet Kefir, or cover and leave on the counter at room temperature for another 12-24 hours to complete a 2nd fermentation. This will produce a stronger flavor and slightly thicker Kefir.
  • Place the recovered grains into a new Mason Jar and repeat the process of adding fresh milk, covering with jar lid and allowing another 12-24 hours to ferment.
  • Repeat this process for an endless supply of Kefir.
