Kefir protein fluff
Light and fluffy, this is the perfect end to a summer meal.

Equipment
- Handheld Beater or immersion blender with whipping attachment
Ingredients
- 4 cups Fresh Kefir
- 1 small pkg fruit flavored gelatin regular or sugar free
Instructions
- Spoon Kefir into large mixing bowl or glass pitcher.
- In a separate bowl, add 1/2 cup boiling water to gelatin. Using blades of immersion blender, dissolve gelatin and add 3 ice cubes, 1 at a time until gelatin mixture is foamy and ice cubes are dissolved.
- Change to whipping attachment of immersion blender and whip gelatin until light and fluffy.
- Blend gelatin into Kefir and briefly whip just until uniform in color.
- Pour into serving dishes and chill.
