Equipment

  • Handheld Beater or immersion blender with whipping attachment

Ingredients

  • 4 cups Fresh Kefir
  • 1 small pkg fruit flavored gelatin regular or sugar free

Instructions

  • Spoon Kefir into large mixing bowl or glass pitcher.
  • In a separate bowl, add 1/2 cup boiling water to gelatin. Using blades of immersion blender, dissolve gelatin and add 3 ice cubes, 1 at a time until gelatin mixture is foamy and ice cubes are dissolved.
  • Change to whipping attachment of immersion blender and whip gelatin until light and fluffy.
  • Blend gelatin into Kefir and briefly whip just until uniform in color.
  • Pour into serving dishes and chill.
