Kefir soft cheese
Simple to make, you can use this soft cheese just as you would cream cheese or Neufchatel.

- Large bowl
- Nylon strainer
- Cheesecloth or restaurant sized coffee filters
Ingredients
- 4 cups Fresh Kefir
Instructions
- Place cheesecloth or filter lined strainer over bowl and spoon Kefir into cheesecloth.
- Cover and set Kefir on counter leaving undisturbed for 12-18 hours until desired consistency is achieved.
- Using a spatula, transfer cheese into refrigerator container and store until ready to use in a recipe or as a spread.
- Use the whey as a nutritious probiotic ingredient in smoothies, soups, etc. or sprinkle over your vegetable garden. Many pets also love whey!
