Equipment

  • Large bowl
  • Nylon strainer
  • Cheesecloth or restaurant sized coffee filters

Ingredients

  • 4 cups Fresh Kefir

Instructions

  • Place cheesecloth or filter lined strainer over bowl and spoon Kefir into cheesecloth.
  • Cover and set Kefir on counter leaving undisturbed for 12-18 hours until desired consistency is achieved.
  • Using a spatula, transfer cheese into refrigerator container and store until ready to use in a recipe or as a spread.
  • Use the whey as a nutritious probiotic ingredient in smoothies, soups, etc. or sprinkle over your vegetable garden. Many pets also love whey!
